Belle's sun dried tomato brie

Nothing says you’ve put thought and planning into a nice dinner better than a delicious appetizer to start the meal. Instead of chips and dip, why not try a unique and flavorful appetizer that takes only minutes to prepare?

I love brie cheese. It is mild, super soft and a perfect complement to many different ingredients. It can be used in dishes that are sweet or savory and seems to take on the essence of whatever it is paired with.

My sun-dried tomato brie is the perfect combination of both. The mellow sweet cheese melted with the tangy and fragrant tomatoes will have your guests begging for more – and that’s the tease in “appeteaser.” Once you try it, you’ll realize how delicious brie can be.

Belle’s Sun-Dried Tomato Brie

3 small triangles or one large wedge of Brie Cheese

½ cup chopped sun-dried tomatoes (the ones in a jar with oil)

Place the brie in an oven safe dish. Top with the sun-dried tomatoes. Bake at 350 until brie starts to melt (about 5 minutes). Watch it carefully or you will end up with soup. You can also microwave for 1 minute or until brie starts to melt. Serve with crackers.
