Production of practically all of Utah's ice cream products, including ice cream, ice cream mix, hard ice milk, soft ice milk and ice milk mix, increased during 1987 over the previous year.

The Utah Agricultural Statistics Service said Utah manufacturers produced more than 9.8 million gallons of ice cream last year, more than 5 million gallons of ice cream mix, nearly 7 million gallons of ice milk and ice milk mix and more than 1 million gallons of milk sherbet and milk sherbet mix.

While Utah ranks only 25th among states in the amount of ice cream produced, it is No. 1 in the nation in the amount of ice cream consumed per person in the state, according to the Utah Dairy Commission.
