The fifth annual Spice on Ice: Best of Cache Valley dinner and benefit takes place Thursday, March 27, 5:30 p.m., at the George S. Eccles Ice Center, 2825 N. 200 East, North Logan. Participating restaurants include Blackstone, Cafe Sabor, Logan Golf and Country Club, Hamilton's, Kamin Thai Cuisine and Indian Oven. The chefs will prepare dishes for judges and guests as they compete for three titles: the Judge's Choice, People's Choice and Chef of the Year.
Last year, the fund-raiser generated close to $40,000 for the nonprofit George S. Eccles Ice Center.
Tickets are $50 per person, and sponsor tables start at $600. Tables seat eight. There is also a live auction that is free to the public (435-787-2288).
Art & Soup Celebration is today and Thursday at the Sheraton City Centre, 150 W. 500 South. The public is invited for lunch or dinner and to view artwork from more than 40 artists while sampling soup from more than 20 restaurants and food purveyors.
Participants include Blue Boar Inn, Boulevard, Cakes De Fleur, Cookietree Bakeries, Good Day Bakery & Catering, Grounds for Coffee, Harmon's Deli in Draper, Les Madeleines Patisserie & Cafe, High Rock Steakhouse, Hopper's Seafood & Grill, Lugano Restaurant, Madeline's Steakhouse & Grill, Mama's Plantation, Pierre Country Bakery, Radda Caffe, Red Rock junction, Utah Food Services, Caffe Molise, Silver Fork Lodge, Biaggi's Ristorante Italiano, Olio Ristorante, Paradise Bakery & Cafe, and Rico Mexican Delicatessen & Catering.Often when people taste the soups, they want the recipe. Here's one that was served at a past Art & Soup event:
PIERRE'S SPRING CHICKEN SOUP
1/2 pound chicken breast
8 cups good chicken stock
8 ounces unsweetened coconut milk
2 ribs celery, sliced
3 tablespoon grated ginger
1 teaspoon salt
1 teaspoon black pepper
1 bunch cilantro, chopped
Dice chicken breast. Heat stock to a simmer and add coconut milk, celery, ginger and chicken. Simmer 15 minutes, add salt, pepper and cilantro. Ladle into bowls and top with almonds. Serves 8-10. Pierre's Country Bakery
