Gastronomy Inc., the 20-year-old firm that owns and operates seven popular restaurants downtown and near the University of Utah, will open a new seafood restaurant early next year in the Cottonwood Corporate Center, 3000 E. 6400 South.

Construction is scheduled to get under way next month.Market Street Grill and Oyster Bar will be a "hybrid" of several other Gastronomy restaurants, said John Williams, a partner in the group.

"The restaurant will feature fresh seafood dining like the Market Street Grill (downtown), with a fresh fish market similar to the Market Street Broiler (near the University of Utah), and a private club component like the Market Street Oyster Bar (downtown)," said Williams.

Williams said the decision to build at the new office center, located at the mouth of Big Cottonwood Canyon and just southwest of the Old Mill, came after numerous requests from its patrons for a seafood restaurant in the south valley. He said many locations were considered before settling on the office park.

"The Cottonwood Corporate Center seems ideal, with adjacent free parking, easy access from the 6200 exit off I-215,and a growing population that likes to dine out," said Williams.

Architect Ken Pollard is designing the 10,000-square-foot facility.

Gastronomy also owns and operates the New Yorker, Baci Trattoria, Club Baci and Cafe Pierpont, all in the downtown area.
