Utah State Fair organizers encourage anyone who uses vegetables in cooking to submit their original recipes for a chance to be in the fair's first Veggie CookOff.
Five finalists will prepare their recipes at the fair Saturday, Sept. 12, from noon to 2 p.m. They will be eligible to win a grand prize of $500 cash and $500 of kitchen equipment, a first-place prize of $300 cash and $300 of kitchen equipment and a third-place prize of $200 cash and $200 of kitchen equipment.Lustre Craft International, the contest's sponsor, requests that entries be postmarked by Aug. 14. Entrants should print the name of the recipe, exact measurements of ingredients, cooking times and temperatures and pan sizes. Contestants should also include their name, address and phone number.

Entries will be judged on creativity, appearance, ease of preparation, nutritional value, cost of ingredients and taste. Professional chefs, cooks or food handlers may not enter the contest.
