News reports that Americans are eating better always make me smile. Obviously, the survey takers don't see the mail I get whenever we run a request for some sort of dessert recipe. We get sacks of the stuff.

Steven McGee was one respondent with the recipe for fudge that uses marshmallow creme and evaporated milk. It was given to him by his friend Marilyn Dunham of San Angelo, Texas.The second recipe was sent by Ellen Shumate of Graham, Texas.

CHOCOLATE FUDGE

Yields 5 pounds

4 1/2 cups sugar

1 teaspoon salt

2 tablespoons butter

2 (7 ounces each) jars marshmallow creme

14 1/2-ounce can evaporated milk

12-ounce package semi-sweet chocolate chips

3 (4 ounces each) bars milk chocolate, chopped up

2 cups coarsely chopped nuts

In 4-quart heavy pan over medium-high heat, bring sugar, salt, butter and milk to full boil, stirring constantly. Boil for 6 minutes, stirring constantly. Remove from heat. Add all of the chocolate and marshmallow creme. Stir vigorously until chocolate is melted and mixture is uniform in color. Stir in nuts and pour into buttered 9-by-13-inch or larger pan. Refrigerate until firm enough to cut into squares or bars. Wrap and keep in fridge.

Hints: Shave or chop the bar chocolate on a cutting board so it will melt more quickly. Remove the lids and seals from jars of marshmallow creme and microwave on high for 30-45 seconds; that makes it much easier to remove from jars and pour into the mixture.

You may add up to 2 1/2 ounces of your favorite liqueur with the chocolate and marshmallow creme. Kahlua is delicious with pecans, and amaretto works very well with coarsely chopped almonds.

MARSHMALLOW CREME FUDGE

Yields 5 pounds

4 cups sugar

14 1/2-ounce can evaporated milk

1/2 stick (1/4 cup) margarine

7-ounce jar marshmallow creme

12 ounces semi-sweet chocolate chips

1 teaspoon vanilla

1 cup coarsely chopped nuts, optional

Bring sugar, milk and margarine to full boil. Boil 9 minutes, stirring constantly. Turn off heat. Add chocolate chips, marshmallow creme, vanilla and nuts. Stir until melted. Beat fudge until it loses its gloss, and spoon onto waxed paper.
