Members of the Beehive Chef's Association conferon last-minute arrangements for the annual Les Amis d'Escoffier Society dinner. The fund-raiser will Be Wednesday, March 22, at University Park Hotel. Limited seating is available through Kathy at the hote, 581-1000. The cost of the classically prepared seven-course dinner is $80 per person. Proceeds from the dinner will go toward the association's chef apprentice program. According to Fujita, "Each dish is classically prepared, in its truest form and adhering to the registered recipes of Escoffier, the father of classic cuisine."
