Five Salt Lake County residents have earned prizes in the Utah Farm Bureau Federation's 11th annual Cookout King contest at the Utah State Fair.

Bob Kenney, Salt Lake City, won first prize in the the Dutch oven category, won the showmanship award and was named Cookout King for his Dutch oven meal of roast-spiced beef.

Other winners and their meat categories were Dee Phillips, Clinton, Davis County, beef; Steve Burton, West Jordan, lamb; Jim Parks, Ogden, pork; and Leonard Blackham, Moroni, Sanpete County, poultry.

Kenney said his winning recipe is relatively easy to fix in a Dutch oven. "The ingredients include three pounds of rolled beef ribs, one teaspoon of ginger, a quarter teaspoon each of cinnamon, cardamon, nutmeg and black pepper, and three cloves of garlic.

"After untying the ribs and mixing the spices, heat your Dutch oven and, with a muslin pad, rub the spices generously over both the inside and outside of the meat. Then add the garlic and retie the roast and cook in the Dutch oven at 30 minutes per pound of beef at 350 degrees."
