Mashed potatoes (not to mention turkey, cranberries and pumpkin pie) are probably as popular for Thanksgiving and Christmas dinners today as they were in 1940. Yet Utah potato growers now harvest only half as many acres as they did then. Not to worry. Per-acre production has more than doubled.
