An egg gets 2/3 of its calories from fat, 1/3 from complete protien, and a trace from carbohydrate. It is a near ideal ketogenic diet food. I doubt that any palatable vegetable substitute would ever be nearly as good for you.

It seems silly to try to replace one of the most healthful food you can eat, but billionaires need to spend their money somewhere. As far as meat using a lot of resources, that is misleading. Ruminant animals like beef cattle are excellent converters of low quality forages. They are able to thrive in desert areas using solar energy (stored in plants) that would otherwise be wasted.

All the negative hype for GMOs and now we want to create synthetic meats and eggs by ripping apart natural plants at the cellular level.
