I had my toffee separate once and wondered why cause it never did before or since. This is good information.

Alas, my "separation anxiety" results from aging dental work. If I eat toffee or caramels or such-like, bye bye fillings. So, I make it then give it all away.

My mother-in-law Donna always said the secret to good toffee was to make it on a clear day. My wife has always followed that advice and her toffee is the best I've ever tasted.

Toffee is my favorite candy. Thanks so much for the recipe. I'm excited to make this toffee. Does anyone know where to buy dry roasted almonds? Do they come already chopped?

The Nutty Guys do dry-roasted almonds. You can buy their products in a lot of the grocery stores,I buy them at Albertson's in the produce section. They also sell things like soy nuts and wasabi-dried peas.

Huge thanks to Ruth to sharing her expertise this season. I used her recipe to create a pan of toffee that is just cooling on the counter now, with no signs of separation whatsoever. I made it without a candy thermometer and pulled it off when I saw the puff of smoke that she described. Congrats to Ruth for her well deserved acclaim!
