Ingredients

2 eggs
1/3 cup sugar
2/3 cup butter
1 1/2 teaspoons baking soda
1 quart kefir, buttermilk or sour milk
Flour
Rye flour


Directions

Beat eggs and sugar until fluffy. Melt butter. Blend baking soda with milk. Combine all ingredients and enough flour, in equal proportions, to make a firm dough. Thinly roll 1/12 of the dough with cloth-covered rolling pin. Cook on lightly greased griddle for a minute or two, until bubbles and brown spots appear, then turn. Fold each lefse in half or quarters. Cool between cloths and store in plastic bags. To serve, spread with butter and sprinkle with brown or white sugar and cinnamon. Makes 12 servings.
