For crust:
1 cup graham cracker crumbs
3 1/2 tablespoons melted butter
2 tablespoons sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
For filling:
3 envelopes unflavored gelatin
3/4 cups sugar, divided
2 eggs separated
1 cup milk
1 6-ounce can frozen orange juice, undiluted
3 cups small curd cottage cheese
1 cup whipping cream
For glaze:
1 envelope unflavored gelatin
1/2 cup water
1/2 cup sugar
1 1/4 cups orange juice, reconstituted
To prepare crust, mix together crumbs, butter, sugar, cinnamon and nutmeg. Reserve 1/4 of the mixture. Pat remaining 3/4 of mixture into glass dish or springform pan. To prepare filling, combine 1/2 cup of sugar and 3 envelopes of unflavored gelatin in saucepan. In separate bowl, beat egg yolks and milk together; add to gelatin mix. Cook on low heat until gelatin is dissolved. Add the undiluted orange juice and cottage cheese; place in a blender and mix until smooth. Cool completely. Beat egg whites until stiff and add to cooled mixture. Beat whipping cream with remaining 1/4 cup sugar and fold into mixture. Pour into crust and chill until set. Gently sprinkle reserved crumbs on top. Decorate with slivered orange slices that have been patted dry and cut into small wedges. Top with orange glaze just before serving.
