Ingredients
3 large (about 11/2 pounds) fresh tomatoes
1/2 cup chopped fresh basil or parsley
3 tablespoons olive oil
2 tablespoons balsamic or red wine vinegar
2 tablespoons sliced scallions
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 box (16 ounces) penne pasta, uncooked
1 package (5.2 ounces) soft cheese with garlic and fine herbs
Directions
Core fully-ripe tomatoes; coarsely chop (makes about 4 cups). Set aside in a large bowl along with basil, olive oil, vinegar, scallions, salt and black pepper. Meanwhile, cook pasta according to package directions. Drain pasta; return to saucepan. Add cheese and reserved tomato mixture; stir until cheese melts and forms a creamy sauce. Garnish with basil leaves and tomato wedges. Serve immediately. Serves 4.
