Satay and Peanut Sauce

Ingredients

1 teaspoon sugar
1 teaspoon salt
1 pound pork
2 tablespoons curry powder
1/2 cup coconut milk
bamboo skewers


Directions

Soak skewers in water for at least 30 minutes. Slice the pork into thin strips (about 1/2 inch thick) so that it will fit onto skewers. Mix curry powder, sugar, coconut milk and salt in a bowl and marinate pork in mixture for 30 minutes.

Thread the pork onto the skewers, stuffing as much on as possible. Grill over hot charcoals (the coals should be covered with ashes). Serve with peanut sauce (recipe follows).

Serves 4.


Peanut Sauce

3/4 cup coconut milk

1 tablespoon red curry paste

1 tablespoon tamarind

3 tablespoons sugar

2-3 tablespoons peanut butter (chunky works best)

2 tablespoons fish sauce

Add the coconut milk to a cold saucepan and place it on medium heat. As the milk is heating, stir in the curry paste. Mix well. When you see red oil simmering on the top, add the remaining ingredients. Stir and taste. You should be able to taste all the flavors. If the sauce is too thick, add a teaspoon of water.

Serves 4.
