Guiltless Guacamole

Ingredients

1 10-ounce box frozen peas
1 ripe avocado, chopped
1 4-ounce can chopped green chile peppers
3 tablespoons lime juice
1/4 cup lite sour cream
1 teaspoon minced garlic
1 teaspoon ground cumin
1 cup chopped plum tomatoes
1/3 cup chopped onions (or 1 tablespoon dried onion flakes)
2 tablespoon chopped fresh cilantro
Salt and black pepper to taste


Directions

In a food processor or blender, combine peas, avocado, chile peppers, lime juice, sour cream, garlic and cumin. Process until smooth and transfer to a medium bowl. (You may want to add 1/4 cup water to make it easier to process.) Stir in the tomatoes, onion and cilantro. Season to taste with salt and black pepper. Store covered in refrigerator for up to 3 days. Makes 3 cups.
