Ingredients
3 pounds sirloin-end pork roast
2 teaspoons Southwest seasoning
3 cups salsa
6-8 tortillas
1 cup grated cheese
Chopped fresh cilantro
Black beans or Spanish rice (serving suggestion)
Directions
Rub pork roast with Southwest seasoning and place in slow cooker.
Pour 2 cups salsa over roast and cook on low 6-8 hours.
When the meat falls off the bone, shred with a fork.
Heat tortillas and fill with meat mixture.
Arrange on platter and top with remaining salsa and cheese.
Put under the broiler until cheese is bubbly.
Serve on a bed of black beans or Spanish rice. Serves 4-6.
