Oasis Cafe Granola

Ingredients

4 3/4 cups rolled oats
1 cup dried coconut
1 1/4 cup sliced almonds
1/4 cup pumpkin seeds
1/2 cup cashews
1 cup dried cranberries
1/2 cup golden raisins
1/2 cup dried apricots (optional)
3/4 cup brown sugar
1/2 teaspoon allspice
1 teaspoon cinnamon
1/2 cup real maple syrup


Directions

Preheat oven to 325 degrees. In a large bowl combine oats, coconut, almonds, pumpkin seeds, cashews, cranberries, raisins and apricots. In a separate bowl, mix brown sugar, allspice and cinnamon. Stir the brown sugar mixture into the large bowl until all ingredients are covered. Drizzle maple syrup into mixture (to avoid clumping) just before baking, use hands to saturate all ingredients.

Spread out on a wax paper-lined pan (evenly coat ingredients with cooking spray if a crispier granola is desired). Bake for 10-12 minutes or until brown. Serve with milk, cream, yogurt or fresh fruit as desired.
