Raj-Style Marinade

Ingredients

1 1/2 cups low-fat yogurt
2 tablespoons fresh lemon juice
1/4 teaspoon cayenne pepper
2 teaspoons minced garlic
2 teaspoons ground coriander
1 teaspoons ground turmeric
2 teaspoons minced fresh ginger
Salt and white pepper to taste


Directions

Place yogurt, lemon juice and seasonings in a blender and mix at low speed until well combined. Place chicken breasts (or other kinds of meat) in a non-metal pan. Add yogurt mixture, mixing with a wooden or plastic spoon until chicken is well coated. Cover the pan and marinate in the refrigerator up to 60 minutes.

Take chicken out of marinade and remove excess marinade with paper towel. Grill chicken until cooked through (when juices run clear), turning frequently to prevent charring. Makes enough for 4 servings (for 1 pound skinless chicken breasts).

Nutrients per serving: 62 calories, 1 gram total fat, 8 grams carbohydrate, 5 grams protein, no fiber, 65 mg. sodium.
