Macaroni and Cheese Primavera

Ingredients

2 tablespoons butter or margarine
2 tablespoons flour
2 cups milk
1/2 cup shredded Monterey Jack cheese
1/2 cup grated Parmesan cheese
1 cup elbow macaroni, cooked
2 cups broccoli florets, blanched
1 cup peas, blanched
1 cup sliced red or green bell pepper, blanched
Salt
Pepper
Paprika


Directions

Preheat oven to 350 F.

Melt butter in medium saucepan. Stir in flour. Cook, stirring frequently 2 or 3 minutes. Stir in milk. Heat to boiling, stirring constantly until thickened. Remove from heat. Add cheeses, stirring until melted. Stir in the cooked macaroni and vegetables. Season with salt and pepper.

Spoon mixture into a 2-quart casserole sprayed with cooking spray. Sprinkle with paprika. Bake covered in 350 F. oven for 20 minutes. Uncover and bake another 10 to 15 minutes or until slightly browned on top. Makes 4 main-dish servings or 8 side-dish servings.
