Zucchini Bread

Ingredients

3 eggs
2 cups sugar
1 cup salad oil
2 cups grated, unpeeled zucchini
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon soda
1/4 teaspoon baking powder
3 teaspoons cinnamon
1/2 cup chopped nuts, optional


Directions

Mix eggs, sugar and salad oil. Add grated zucchini, vanilla, flour, salt, soda, baking powder, cinnamon and nuts. Bake in a loaf pan one hour at 325 degrees, or pour into mini-muffin pans and bake 11 minutes.
