Tomato Mint Pesto

Ingredients

1 tablespoon kosher salt
2 large cloves garlic
1 cup fresh mint leaves
2 large tomatoes, coarsely chopped
1/4 cup olive oil
1/2 teaspoon ground pepper


Directions

Place salt, garlic and mint in mortar and pestle. Grind until mint leaves are softened. Add tomatoes, olive oil and pepper and grind until tomatoes have been incorporated into the mint, about 2-3 minutes. Or place all ingredients in a food processor and process until pureed, about 30 seconds. Brush on chicken, steaks or use as a bruschetta topping.
