Gingerbread Waffles

Ingredients

1 1/2 cups flour
1 teaspoon ginger
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon cinnamon (optional)
3 eggs
1/4 cup sugar
1/2 cup molasses
1 cup sour milk
1/3 cup melted shortening


Directions

Sift the flour, along with ginger, salt, baking soda, baking powder and cinnamon. In a separate bowl, beat 3 eggs until light. To the eggs, add sugar, molasses, sour milk and shortening. Combine liquid and dry ingredients with a few swift strokes. Using a measuring cup, dip batter onto hot waffle iron. Close waffle iron and bake until steaming stops, 4 to 5 minutes. Do not lift cover during baking. Loosen baked waffle carefully with fork. Makes 6 waffles.
