Creamy Pumpkin Leather Pie
Ingredients
1 9-inch unbaked pie shell
1/2 cup brown sugar
1/2 cup sugar
1/2 cup egg substitute
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 2/3 cups fresh cooked pumpkin or 1 can (15 oz.) pumpkin
1 can (15 oz.) evaporated milk
Directions
Combine all ingredients; beat until smooth. Pour in plastic-line dryer trays and dry at 130 degrees until crisp. Break into pieces and blend into powder; refrigerate.
When ready to use, add 2 1/2 cups boiling water to two cups pumpkin powder. Mix well and pour into unbaked pastry shell. Bake at 350 degrees for 20 minutes; reduce heat to 325 degrees and bake an additional 20 minutes. Cool; top with whipped cream if desired. Makes 8 servings.
Each serving contains 439 calories; 20 gm fat; 425 mg sodium; 30 mg cholesterol.
