Roast Pork with Sweet Potatoes and Apples
Ingredients
1 4-5 pound pork loin
1 teaspoon salt
1/2 teaspoon pepper
2 pounds sweet potatoes, peeled and sliced 1/2-inch thick
1 1/2 pounds apples, peeled, cored and cut into 1/4-inch rings
1/3 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon flour
1 cup beef broth
Directions
Preheat 14-inch Dutch oven using 20 coals on top and 15 underneath.
Rub meat with salt and pepper. Insert meat thermometer; roast 30 minutes per pound or until internal temperature reaches 170 degrees.
While meat is roasting, boil sliced sweet potatoes in salted water until tender. About 30 minutes before pork is cooked, skim fat from Dutch oven, place apples and sweet potatoes around pork. Mix brown sugar and spices; sprinkle over apples and sweet potatoes. Cover and bake 30 minutes more, or until apples are tender.
For gravy, mix flour with beef broth and drippings in bottom of Dutch oven; pour over the roast.
