Golden Potato Bake
Ingredients
Preparation time: One hour and 25 minutes
Yield: 8-10 servings
6 medium potatoes
1 pint sour cream
2 1/4 cups (10 oz.) sharp Cheddar cheese
1 tablespoon onion, chopped
2 tablespoons butter, melted
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons milk
1/3 cup bread crumbs, finely ground
Directions
Boil potatoes in skins. Peel, chill well and grate with cheese into large bowl. Add sour cream, milk, onion, salt and pepper. Add additional milk if necessary. Place in lightly greased, flat 2-quart baking dish. Melt butter and combine with bread crumbs. Sprinkle crumbs over potatoes and bake for 350 degrees for 1 hour.
Each serving contains 314 calories; 15 gm fat; 569 mg sodium; 54 mg cholesterol.
