Stuffed Potatoes

Ingredients
Preparation time: 1 hour and 40 minutes
Yield: 5-8 potatoes
8 medium potatoes
1/2 cup cottage cheese
3 tablespoons chives or onions, chopped
3 tablespoons Parmesan cheese
1-2 tablespoons skim milk
Parmesan cheese
Directions
Scrub potatoes well, prick with fork and bake at 400 degrees for about one hour. Cool slightly; cut in half lengthwise. Scoop out the pulp and combine with remaining ingredients; whip with electric mixer. Stuff potato shells and sprinkle with Parmesan cheese. Bake uncovered for 15 minutes.
Each serving contains 151 calories; 2 gm fat; 103 mg sodium; 2 mg cholesterol.
