Nutmeg Mousse

Ingredients

3 eggs
3/4 cup sugar
1 cup heavy cream
1 envelope unflavored gelatin
1/2 cup cold water
1/2 teaspoon vanilla
1 teaspoon nutmeg, freshly grated (or more to taste)

Beat eggs until frothy; add sugar and continue beating until light. Beat cream until it holds a definite shape; fold into egg mixture. Sprinkle gelatin over cold water; heat until dissolved. Stir gelatin into egg mixture with vanilla and nutmeg. Grate additional nutmeg of top as garnish. Pour into bowl and chill until firm. Makes 4-6 servings.


Directions

Note: If desired, eggs may be blended with sugar, water and gelatin and cooked in a custard until thickened. Chill thoroughly and fold in whipped cream and freshly grated nutmeg.
