Catfish Cakes

Ingredients

2 pounds poached catfish fillets
2 tablespoons mayonnaise
2 eggs, beaten
Salt and pepper to taste
Worcesteshire sauce to taste
Fresh bread crumbs
8-12 tablespoons butter


Directions

Drain cooked fillets thoroughly, pat dry and flake. Mix the flakes with mayonnaise, eggs, salt, pepper and Worcestershire sauce; form into patties. Roll the patties in bread crumbs. In a skillet over moderate heat, melt the butter. Saute the catfish cakes in the butter until heated through and lightly browned. Makes 8-10 cakes.
