Ingredients
1 unbaked 9-inch pie shell
1/2 cup onion, finely chopped
1 tablespoon butter
4 eggs, lightly beaten
2 cups cream or half and half
1 teaspoon salt
1/2 pound Swiss cheese, finely grated
Dash of nutmeg
Dash of cayenne pepper
1 can (6 oz.) lump crabmeat
Directions
Saute onion in butter for 5 minutes or until transparent; set aside. Mix eggs, cream, salt, cheese, nutmeg and cayenne. Add onions and crabmeat. Pour into pie shell; bake at 450 degrees for 10 minutes, reduce heat to 325 degrees and bake additional 20-25 minutes. Makes 8 servings.Each serving contains 379 calories; 32 gm fat; 493 mg sodium; 194 mg cholesterol.
