Ingredients

Obtaining laverbread in Utah is a challenge; if you want to spend about $30 (shipping included) you can order it from a Web site like Wales Direct www.wales-direct.co.uk. As a less-expensive compromise, substitute cooked spinach or the seaweed available at health-food and Asian markets, as long as the kind you choose is moist-packed, not dried.

1 pound prepared laverbread
2 ounces oatmeal
4 slices bacon
4 slices bread
Freshly ground black pepper


Directions

Divide the laverbread into four portions, season well with black pepper and coat with oatmeal. Dry fry the bacon so that the fat runs and remove the bacon from the pan when crisp. Add the laverbread cakes and fry in the bacon fat until crisp and golden. Toast the bread and serve the laverbread cakes on top, garnished with the bacon, for a traditional Welsh breakfast.
