Meat Loaf with Shredded Vegetables

Ingredients
4 cups cabbage, finely shredded
1 medium onion, finely chopped
1 1/2 tablespoons oil
1 cup carrots, shredded
1 large clove garlic, minced
1/2 pound extra lean ground beef
1 egg white
1 whole egg
1/3 cup bread crumbs
1 teaspoon basil
1/4 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup water
2 tablespoons vinegar
1 cup potato, grated
Directions
Saute cabbage and onion in oil in large skillet over medium heat; stir occasionally and cook about 5 minutes. Reduce heat and saute until cabbage turns golden brown. Add carrots and garlic; saute additional 5 minutes then remove from heat and cool.
Combine beef with egg white, egg, bread crumbs, basil, oregano, salt, pepper, water and vinegar. Add cooked vegetables and potatoes; blend well. Shape into 8-inch loaf, cover with foil and bake at 350 degrees for 30 minutes. Uncover and bake 30 minutes longer; let rest 15 minutes before slicing. Makes 4 servings.
