Horn & Hardart's Baked Macaroni and Cheese

1 tablespoon butter
1 tablespoon flour
3 cups milk
1 teaspoon salt
Dash of white pepper
Dash of cayenne pepper
2 cups Cheddar cheese, grated
1/2 pound elbow macaroni, cooked and drained
1/2 cup canned tomatoes, drained and chopped
1 teaspoon sugar
Directions
Preheat oven to 350 degrees; grease a 1 1/2-quart baking dish.
Melt the butter in a saucepan over medium heat. Whisk in flour, then milk, salt and peppers. Cook until mixture thickens; add cheese and stir until melted. Add macaroni and tomatoes. Transfer to prepared dish and bake until the surface is browned, 30-40 minutes. Makes 6 servings.
