Ingredients
2 tablespoons yeast
1 cup warm water
3 cups unbleached flour
1/4 cup olive oil
1 teaspoon salt
3 tablespoons tomato paste
1 yellow onion, peeled and chopped
6 green onions, chopped
1 clove garlic, crushed
Freshly ground pepper
Directions
Place yeast and water in mixing bowl. Add half the flour, olive oil, sugar, and salt; mix until smooth. Add remaining flour, blend in by hand, then knead for 5 minutes. Cover and let rise about 1 hour or until doubled in bulk.
Punch down and knead for 1-2 minutes. Roll the dough to fit a greased 9-by-13-inch pan. Let dough rise until doubled, then punch holes all over it with a fork. Brush top of the dough with olive oil and tomato paste. Combine onions and garlic; sprinkle over top of dough. Sprinkle with pepper. Bake at 375 degrees for 25 minutes or until lightly browned. Makes 8-10 servings.
