Orange Raspberry Vinaigrette

Ingredients

3 tablespoons fresh orange juice
1 tablespoon raspberry vinegar
1/4 cup light olive oil
Salt and freshly ground pepper to taste
2 teaspoons fresh chives, snipped


Directions

Mix the orange juice and vinegar in a small bowl; slowly add oil, whisking constantly until smooth. Season with salt and pepper, and stir in chives. Makes 1/2 cup, or 2 servings.

Each serving contains 251 calories; 21 gm fat; 3 gm carbohydrate; 258 mg sodium; 0 mg cholesterol.
