Sparkling Potatoes
Ingredients
Preparation time: 45 minutes
Yield: 8-10 servings
1 pound bacon or 1 pound ham plus 1 tablespoon oil
1 large onion, sliced
2 cloves garlic, minced
8 potatoes, scrubbed with skins
1/2 pound fresh mushrooms, sliced
1 can (12 oz.) lemon-lime soda
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup parsley, chopped
1/2 pound mild Cheddar cheese, grated
Directions
Dice and brown bacon or chop ham.
Cook onion and garlic in reserved bacon drippings or in 1 tablespoon oil.
Scrub and slice potatoes; slice mushrooms. Combine with lemon-lime soda, salt and pepper. Cover and steam until potatoes are tender; add parsley. Just before serving, sprinkle with cheese and heat through until cheese melts.
Note: Can be baked in a Dutch oven with top and bottom heat for about 30 minutes or baked in a conventional oven at 375 degrees for 30 minutes.
Each serving contains 215 calories; 15 gm fat; 8 gm carbohydrate; 642 mg sodium; 40 mg cholesterol.
