Warm Goat Cheese Salad
Ingredients
1 package spring green salad mix
1 3.5-ounce goat cheese log
1/2 cup glazed walnuts
Balsamic vinaigrette salad dressing
Divide salad mix among four plates. Cut log into four slices. Flatten each slice into a disc shape and place them in a medium-hot non-stick skillet for about 20 seconds, or until cheese is heated through. (You can also briefly warm the cheese in the microwave about 10-15 seconds on high.) Carefully remove warm cheese with a spatula and place on top of each salad. Scatter with walnuts, drizzle with salad dressing and serve immediately. Serves 4.
Note: You can buy walnuts already glazed, or you can combine 1/2 cup walnuts with 3 tablespoons sugar in a small skillet and cook over low heat until sugar melts, stirring to coat nuts. Spread on foil to cool.
Directions
Variation: Roll discs in chopped pecans or walnuts before placing in skillet. Toast on both sides (about 20 seconds per side). Omit glazed walnuts.
