Marinade for Grilled Vegetables

Ingredients

2/3 cup olive oil
1/4 cup fresh lemon juice
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh thyme
1 tablespoon grated lemon zest
1 teaspoon kosher salt, or to taste


Directions

Combine all marinade ingredients in a nonreactive bowl. Marinate vegetables such as bell peppers, zucchini, yellow squash and pearl onions for about 1 hour before skewering and grilling.
