Rich and Tasty Pumpkin Dessert

Ingredients

Yield: 12 servings

For crust:
1 package yellow cake mix (reserve 1 cup)
1 egg
1 stick margarine or butter, melted

For filling:
1 1/2 cups pumpkin
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon ginger
1 12-ounce can evaporated milk
2 eggs

Topping:
1 cup reserved cake mix
1/2 cup sugar
1 teaspoon cinnamon
3 tablespoon margarine (firm)
Chopped nuts, optional

For crust: After reserving 1 cup cake mix, combine remaining mix with egg and melted margarine or butter. Press into large cake pan (9 X 13-inch or larger).

For filling: Mix well and pour over crust.


Directions

For topping: Mix dry ingredients; cut in margarine. Crumble over top of filling. Bake dessert at 350 degrees for 1 hour.

Each serving contains 439 calories, 22g fat, 57g carb, 494mg sodium, 65mg cholesterol.
