Granola Muffins

Ingredients

1 1/2 cups reduced-fat biscuit mix
1 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 cup Quaker 100 percent Natural Oats and Honey Cereal
1/2 cup raisins
1 large egg, lightly beaten
3/4 cup skim milk
1 tablespoon vegetable oil


Directions

Combine biscuit mix, sugar and cinnamon in a bowl; stir in cereal and raisins. Make a well in the center; set aside. Combine egg, milk and oil. Add to flour mixture, stirring until moistened. (Batter will be thin.) Coat muffin cups with cooking spray; spoon batter into cups, filling three-fourths full. Bake at 375 degrees for 15 to 20 minutes, until golden brown. Yield: 16 muffins.
