Ingredients

Yield: 30 servings

2 cups raisins
2/3 cup water
1/2 cup shortening
1 cup sugar
2 eggs
2 cups flour
2 teaspoons cinnamon
1 teaspoon nutmeg
1/3 teaspoon cloves
1/3 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
2-3 cups rolled oats
1 cup nuts (optional)
1 teaspoon vanilla extract (optional)


Directions

Boil raisins in water for 2 minutes. Drain water into cup to make 1/3 cup liquid; reserve for cookies. Cream shortening and sugar; beat in eggs. Sift flour and spices, baking soda and baking powder and add to sugar mixture along with the 1/3 cup raisin liquid, rolled oats and raisins. (You may add 1 cup nuts and 1 teaspoon vanilla if desired.) Drop by teaspoonful onto greased cookie sheet and bake at 375 degrees for 10 minutes.

Each serving contains 115 calories, 4g fat, 18g carb, 54mg sodium, 10mg cholesterol.
