Turnip Puff Casserole

Ingredients

3 cups cooked mashed turnips
2 tablespoons butter or margarine
1/4 cup minced onion
2 tablespoons unbleached all-purpose flour
1 teaspoon salt
2 teaspoons granulated sugar
1/8 teaspoon freshly ground black pepper
2 large eggs, separated


Directions

To mash turnips: Cut tops off turnips. Scrub roots and leave whole or cut into chunks. Heat 1-inch water to boiling; add turnips. Cover and heat to boiling. Cook whole turnips 25 minutes, chunks 15 minutes, or until tender. Drain and mash.

Melt butter in large pan. Add onion and saute until tender. Add flour and stir well to blend. Add mashed turnips, salt, sugar, pepper and beaten egg yolks.

In small bowl, beat egg whites until stiff and fold into turnip mixture. Pour into buttered 2-quart casserole dish. Bake at 350 degrees for 40 minutes. Makes 4 servings.
