Cheese-Chili Corn Squares

Ingredients

3 ears fresh sweet corn
3 jalapeno chiles, seeded and chopped
1 pound Monterey Jack cheese, grated
6 eggs, beaten
Salt and freshly ground black pepper


Directions

Preheat oven to 350 degrees. Cut the kernels from the ears into a large bowl. Add the chopped peppers, grated cheese, eggs and seasoning.

Butter heavily a 9- by 9-inch baking pan. Pour mixture into the pan and bake for 30 minutes until top is browned. Let mixture cool until it hardens enough to cut into 1-inch squares. Makes 6 to 7 dozen squares.
