Salmon Timbales

Ingredients
2 eggs
1 cup milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup flaked salmon, drained
1 pimento, finely chopped
Directions
Beat the eggs slightly, just so the yolk and white are mixed. Add the milk, which has been mixed with the seasonings. Then add the salmon and pimento; mix well and turn into timbales molds that have been well greased. (Or use greased muffin tin.)
Bake in a slow oven, about 300 degrees for 30 to 40 minutes or until set. Serve with tomato sauce or green peas.
