Guacamole

Ingredients

2 Haas avocados, medium-firm, skinned and pitted
1/2 cup tomato, diced
1 jalape?o pepper, seeded, ribbed and finely diced
2 teaspoons red onion, finely diced
2 tablespoons cilantro, finely chopped
Juice of one lime
Pinch of cumin
Pinch of dark chili powder


Directions

Mix all ingredients. Serve with your favorite tortilla.

Prep helps: Use a spoon or fork to remove the pit from the avocado, rather than a knife, which is dangerous. Wear gloves to seed, rib and dice the jalape?o. If you don't, be sure to wash your hands thoroughly, and do not touch anything (especially your eyes) before you do.

Tip: Before juicing the lime, roll it firmly with the palm of your hand onto a hard surface to break down the internal pulp and get more juice.
