Ingredients
1 tablespoon olive oil
1 1/2 pounds large or jumbo shrimp, shelled and deveined
3 large garlic cloves, minced
1/3 cup fresh lime juice
1/3 cup chicken broth
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
4 teaspoons unsalted butter, in pieces
2 tablespoon chopped basil
Directions
In 10-inch nonstick skillet, heat oil over medium heat. Add shrimp and cook, tossing frequently, 3 minutes, or until just cooked through. With slotted spoon, transfer shrimp to a bowl.
Reduce heat to low, add garlic to pan, and cook, stirring frequently, 1 minute, or until tender. Add lime juice and cook 1 minute. Add broth, cayenne and salt; increase heat to high and cook 2 minutes, or until slightly reduced.
Remove pan from heat and return shrimp to pan. Add butter and basil and swirl until butter has just melted and shrimp are coated. Makes 4 servings.
