Apple Orchard Pork Chops

Ingredients

4 lean pork center-cut loin chops, about 3/4-inch thick
2 teaspoons vegetable oil
Salt and pepper to taste
1 1/3 cups apple cider, or apple juice
1/4 cup whole-grain Dijon mustard
1/3 cup dried currant raisins
2 apples, unpeeled, cored and cut into 1/2-inch-thick slices
1/3 cup sliced green onions
4 teaspoons cornstarch
1/4 cup water


Directions

Heat oil in a large nonstick skillet over medium-high heat. Brown chops about 2 minutes per side. Season with salt and pepper.

While chops are browning, combine apple cider or apple juice with mustard in a small bowl. When meat has browned on both sides, pour juice mixture over chops. Cover pan and reduce heat to medium-low. Cook chops 4 minutes, then add currants, apples and green onions. Cover and cook 5 minutes more. Remove chops to a serving platter; tent with foil to keep warm.

Combine cornstarch with water in a small bowl, then whisk into cooking liquid in pan. Cook and stir until thickened. Pour sauce and apples over chops and serve. Makes 4 servings.
