Cranberry-Pineapple Jam

Ingredients

4 cups cranberries, chopped
1 1/2 cups water
1 20-ounce can crushed pineapple in syrup
8 cups sugar
1/2 bottle liquid fruit pectin
1/2 cup lemon juice
1 tablespoon grated orange rind


Directions

Combine cranberries and water in a large saucepan. Bring to a boil. Reduce flame and simmer 5 minutes. Add pineapple and sugar. Bring to a hard rolling boil, boiling for 2 minutes. Remove from flame and stir in pectin, lemon juice and orange rind. Allow to stand 25 minutes. Pour into hot pint jars, adjust lids and screw-on caps and process in boiling water bath for 10 minutes.
