Cardamom Crisps
Ingredients
1 3/4 cups all-purpose flour
2/3 cup sugar
1 1/2 teaspoons ground cardamom
1/4 teaspoon salt
8 tablespoons margarine, softened
1 egg
1 teaspoon vanilla extract
1 egg white, lightly beaten
Vanilla Glaze (recipe follows)
Preheat oven to 350 degrees. Grease a jelly roll pan or other shallow baking pan, 15-by-10 inches. In a medium bowl, combine flour, sugar, cardamom and salt. Cut in margarine with pastry blender or two knives until mixture resembles coarse crumbs. Mix in whole egg and vanilla extract, stirring just enough to form a soft dough.
Place dough in the pan. With fingers and small spatula or knife, spread the dough until the bottom of the pan is evenly covered. Brush dough with beaten egg white. Bake until edges are slightly browned, 20 to 25 minutes. Cool on a wire rack. While still warm, drizzle with Vanilla Glaze and cut into squares. Makes 60 cookies.
Vanilla Glaze
1 cup powdered sugar
1 teaspoon vanilla extract
1 to 2 tablespoons fat-free milk
Directions
Mix powdered sugar, vanilla and enough milk to make glaze consistency. Makes about 1/2 cup.
