Baked Salmon with Pesto

Ingredients

8 ounces fettuccine
4 salmon steaks or a 16-ounce fillet
1 tablespoon butter, melted
1 tablespoon Dijon mustard
1/2 cup pesto, or to taste
Lemon wedges (optional)


Directions

Preheat oven to 450 F.

Cook pasta according to package directions; drain.

Place salmon in a shallow baking pan sprayed with nonstick cooking spray. Brush with butter and mustard. Bake for 10 minutes or until a wooden toothpick inserted comes out clean. Toss pasta with the pesto sauce. Place on a serving platter and arrange salmon on top.

Garnish with lemon wedges, if desired. Makes 4 servings.

NOTE: For a lighter version, omit the pesto and the butter on the salmon. Toss pasta with one tablespoon of butter and sprinkle with fresh chopped basil.
